It’s a great name, isn’t it? It makes you think of something light and fluffy, with just a touch of playfullness.
I’m pleased to say that the White Cloud cocktail lives up to the expectations; it’s fresh, inviting, and as light as the cloud that it’s named for. With just a ¾ ounce of double cream, it’s luxurious without becoming heavy which, after a very indulgent festive period, is quite frankly music to our ears. However, it’s the use of pineapple juice in the cocktail which is an inspired choice, especially once you combine it with the crème de cacao; between the double cream and crème de cacao, the White Cloud has a very silky mouthfeel, but the juiciness of the pineapple cuts through it so the entire experience ends up feeling far more elegant than you would have expected.
That doesn’t mean that it’s a gentle drink. Oh no, the White Cloud has a heavy whack of booze to go with all of it’s luxury, but the alcohol collaborates with the other ingredients instead of overpowering it. In fact, the final flavour notes of the White Cloud are of citric tartness, and not boozy heat. It’s this kind of well rounded profile that makes a memorable – and versatile – drink, which the White Cloud absolutely is.
♦ 1 ½ ounces vodka
♦ ¾ ounce crème de cacao
♦ 2 ounces pineapple juice
♦ ¾ ounce double cream
Shake the ingredients together with ice and strain into a chilled cocktail glass.
