Look, there’s 2 ounces of cream in this, so don’t say I didn’t tell you so when you make it and it’s completely moreish and slightly sickly. So yeah, it’s a bit creamy. It’s a bit decadent. It’s a bit much. But isn’t that half the fun?

It’s not just creamy though; the combination of the Tia Maria and amaretto creates a tingly, almost warming sensation as you sip on it (and yes, you better sip this artery-clogger, I mean, jeez!) which is actually playful. It’s like a bonfire, but cold; an oxymoron in a cocktail, if you will. Given the amount of cream and sugary liqueurs in it, I’m genuinely surprised it’s not sweeter. Sure, I wouldn’t recommend chugging them all night long, but it doesn’t taste like instant diabetes y’know?

It’s also a well rounded drink; the bonfire analogy before wasn’t an exaggeration, there’s a smoky warmth which just about balances the flavour of the Baileys and the cream. Simple flavours, but when done well – like the Buttered Toffee – it’s very easy to drink, and equally easy to enjoy.


The Recipe

♦  1 ounce amaretto

♦  1 ounce Baileys (or other Irish Cream liqueur)

♦  1 ounce Tia Maria (or other coffee liqueur)

♦  2 ounces double cream

Shake all the ingredients together with ice and then strain into a chilled cocktail glass.
