Back when I worked in retail, the idea of the Wednesday Wall (or Hump Day) was a little bit ridiculous. Having no actual weekend meant that instead of feeling the joy of knowing I was ‘half way there’ it was just one slow conga line of random shifts and sporadic days off that were generally spent as far under the duvet covers as I could manage, trying to hide away from the fact that the house needed cleaning.
Now, however, I understand what people meant. In some respects, a 9-5 weekday job can feel a teensy bit harder as it’s one continuous effort until you hit Friday. No days off to recharge, only the evenings where time is split between tidying up, meal prepping or even just having dinner. It’s exhaustive.
The Pink Squirrel however, is the pinnacle of Wednesday Wall treats. Delightfully creamy with a nice amaretto finish which reminds you so much of marzipan, it’s just that little bit naughty. Double cream in any cocktail is a guaranteed winner in my book, but not something to be trifled with (hey-ho) if you’re calorie counting. 1 ounce of double cream is 103 calories, which is normally enough to make me cringe slightly as i’m mixing it (I would be a filthy liar if I said it stopped me drinking it), but when the work week is half way over it’s definitely one to savor. And then try and stop yourself from making another. Did I mention it’s chocolatey too? Yeah, good luck saying ‘no’ now!
Just remember; Wednesday is officially over, it’s downhill to the weekend from here.
♦ 1 ounce white crème de cacao
♦ 1 ounce crème de noyaux (or amaretto)
♦ 1 ounce double cream
Shake the ingredients together with ice and strain into a chilled cocktail glass.
